Make-Ahead Egg Muffin Cups

(Serves 12 muffins—perfect for grab-and-go all week)

Ingredients:

  • 10 large eggs

  • 1 cup chopped spinach or bell peppers

  • ½ cup shredded cheese (cheddar or mozzarella)

  • ½ cup cooked turkey sausage or diced ham (optional)

  • Salt + pepper to taste

Instructions:

  1. Preheat oven to 375°F. Grease a 12-cup muffin tin.

  2. Whisk eggs in a large bowl. Stir in veggies, cheese, and protein if using.

  3. Pour evenly into muffin cups.

  4. Bake for 18–20 minutes, until set. Cool slightly before removing.

Why they work: High in protein, rich in B vitamins, and loaded with veggies—these cups stabilize energy, keep you full, and support your mood. Bonus: kids love them, and you can switch up the ingredients weekly.
